Night Walker is a washed rind cheese made from How Now Cow milk by Stone and Crow Cheese Company. It is carefully washed in brine daily during maturation, developing a soft texture that becomes richer and more gooey with age. The flavour is mild, savoury, and meaty, true to a traditional washed rind style.
